Black Bean Ambrosia Soup

Ingredients:
1-13 lb spaghetti squash steamed
1 geen bellpepper
2 tablespoons Ghee (Clarified Butter)
2 tablespoons Marjoram
Few dashes of Nutmeg
1/2 15 ounce can of black beans or any bean
1 Tablespoon Westbrae Natural stone ground  mustard

  • Steam spaghetti squash for 30 minutes
  • After squash is steamed, turn off burner, add 1 bell pepper to pot, let sit above steamed water with cover on until bell pepper softens
  • Chop bell pepper, chop steamed spaghetti squash
  • Melt ghee in soup pot 
  • Saute marjoram, few dashes of nutmeg in ghee
  • Add 1/2 can of black beans, chopped bell pepper, spaghetti squash. Save the other half for something else.
  • Continue to saute for a 8 minutes.
  • Add steamed water from vegetables to soup pot.
  • Stir and simmer on medium flame for about 15-20 minutes.
  • Take 1 cup of soup broth and add 1 tablespoon of Westbrae Natural stone ground  mustard, and stir
Add this mixture to the soup...Delicious!

Northern Bean Ambrosia

Ingredients:
3/4  15 ounce can of Northern beans or any bean
2 diced rome tomatoes
1 diced green bell pepper 
2 cups finely diced celery
2 cups steamed acorn squash
2 tablespoons Ghee (Clarified Butter)
2 tablespoons Marjoram
Few dashes of Nutmeg
1 Tablespoon Westbrae Natural stone ground  mustard

  • Melt ghee in soup pot, add spices, saute for a few minutes
  • Add celery, green bell pepper, rome tomatoes and saute for 5 minutes or until tender
  • Add steamed water from steamed acorn squash and stir
  • Add steamed acorn squash and stir
  • Add Northern Beans
  • Add 1/2 teaspoon sea salt
  • Simmer for 10-15 minutes
  • Take 1 cup of soup broth and add 1 tablespoon of Westbrae Natural stone ground  mustard, and stir
Add this mixture to the soup...Delicious!
